We make these simple candied pecans a lot and love how fast they are made on the stovetop. I love them having salads, snacks and cheese boards. They are very sweet and a little salty, and they are added with a little cinnamon and orange peel to make them more delicious.

Key Ingredients
- Pecan: I use half of pecans to make this recipe, but you can easily swap pecans for other nuts like walnuts, hazelnuts or cashews!
- brown sugar: I love the extra rich flavor of these candied pecans.
- spices: I combined cinnamon, salt, vanilla extract and a small amount of orange peel to fit these candied fruits. I also like a little chili, some heated, but this is optional.

You will need
2 cups (6 oz or 170g) half pecan
6 tablespoons (75g) brown sugar
1½ teaspoon ground cinnamon
1/2 teaspoon fine sea salt
1/2 teaspoon vanilla extract
1½ tablespoons water
2 teaspoons orange peel, optional
Cayenne Pepper, optional
direction
1Arrange the baking trays with parchment paper or silicone baking mat.
2Add brown sugar, cinnamon, salt, vanilla, water, orange zest and chili to a medium skillet.
3Place the skillet on medium heat and stir frequently until the brown sugar melts into a bubbling sauce, about 1 minute.
4Add the pecans and make the brown sugar sauce cover it.
5Cook, stirring throughout the day until the pecan looks sweet and smells 2 to 3 minutes. When the nuts in the pan are heated in the pan, the sauce slowly covers them and turns into a shine. Watch carefully the nuts cooked to avoid burning.
6Transfer the candied pecans to a prepared baking sheet and spread it in a layer.
7Let the pecans cool and break them down before serving.
Adam and Joanne’s Tips
- storage: Store the cooled candied nuts in an airtight container. They will last for 1 week at room temperature, in the refrigerator for several weeks, and in the freezer for a month (if not available).
- Salt: 1/2 teaspoon of fine sea salt makes these taste salty. If you wish not to taste the salt, reduce it to 1/4 teaspoon of salt.
- Pecans are too sticky: If it remains sticky after cooling, heat the oven to 325°F (162°C) and bake for 5 to 10 minutes to help harden the candy coating.
