How to make caramel bruley without a torch
Preheat the oven to 325 degrees. Mix the heavy cream and vanilla beans in a pan over medium heat.
Bring to a boil and remove from the heat. Let cool for 15 minutes to remove the vanilla beans.

Whisk the egg yolks and ½ cup sugar until smooth. (Keep the remaining sugar.) Gradually pour the sugary egg mixture into warm cream.

Stir to combine and pour into individual dishes in the oven. *Place the full plates into the oven safe pan and fill the water halfway up the sides of each plate.
Place on a medium oven rack and bake for 40 minutes. Carefully remove very hot water from the oven and cool for 10 minutes before transferring the eggs to the refrigerator to cool.

Refrigerate for at least 2 hours and up to 3 days. When you are ready to caramel, place the dishes on a heat-resistant surface and let them warm for about 30 minutes.
Sprinkle about 1 tablespoon of sugar on each dish and caramelize the sugar with a kitchen torch. A good technique is to go over the top of the dish until most of the sugar melts and then let it cool while repeating the other dish.

Complete each dish with a second ablation. Don’t be afraid to burn the top slightly, make sure your sugar and bubble.
If you don’t have a kitchen torch and don’t plan to buy it, follow these tips to caramel with the broiler in the oven. Cool the finished product with creaminess until ready to serve.
Move the top rack in the oven to the oven as high as possible. Place the Ramekins in the oven on the top rack and turn on the broiler. Bake for 5 to 10 minutes, spinning them frequently to make them evenly bake. Remove them when they turn golden and bubbling.
